About the Recipe

Ingredients
SHRIMPS
1 lb shrimp, peeled
1 tbsp Cajun seasoning
1 tbsp minced garlic
SALSA
1 whole mango diced
1/2 red onion, diced
1/4 cup jalapeños, diced
2 tbsp chopped cilantro
1 tbsp lime juice
Salt pepper to taste.
CILANTRO LIME DRESSING
1/2 cup cilantro
1 half of squeeze lime (juice) and zest
4 tbsp mayo or (greek yogurt)
1 jalapeños
3 clove garlic.
2 tbsp olive oil
Salt n pepper to taste
1/4 cup fresh corn
2 cup of cooked rice.
Preparation
Get the shrimp ready:
Marinate the shrimp with garlic and Cajun seasoning; set aside.
Making the salsa
In a bowl, mix mango, onion, jalapeño, cilantro, and lime juice to make the salsa. Set aside.
Sauce it up:
Blend all cilantro lime dressing ingredients until smooth.
Fire it up:
Cook the shrimp in a hot skillet until browned and cooked through.
To assemble:
add rice to a bowl, top with shrimp and salsa, corn, and drizzle with cilantro lime dressing.
